We recommend T568B for home DIY wiring because store-bought cables and most installers already follow it, making future repairs and extensions easier. If your house was originally wired to T568A, stay with T568A throughout. The one rule that matters is using a single standard across the entire installation, never mixing the two on one cable.

2. Can an ethernet cable work with only four wires connected?

Four wires (pins 1, 2, 3 and 6) can carry 100 Mbps, but gigabit and faster speeds require all four pairs, and PoE also draws on the blue and brown pairs. We do not recommend the shortcut.
